Preparation
- Boil the spaghetti al dente in plenty of salted boiling water.
- Blend the boiled beetroot, garlic, cream, olive oil, and salt until smooth.
- Transfer the sauce to a large pan and heat over low heat.
- Add lemon zest and black pepper, and mix.
- Slice the raw beetroot thinly.
- Season with olive oil, oregano, and salt.
- Bake in an oven at 160°C for 20–25 minutes until crispy.
- Drain the cooked spaghetti and transfer it directly to the pan with the sauce.
- Add the butter and mix until the sauce completely coats the pasta.
- Serve on a plate.
- Garnish with beetroot chips and fresh oregano leaves.
